Bush Berry Gin

Bush berries (or lilly pilly berries) are important to many indigenous nations in Australia and commonly feature in their artwork – we have two paintings from quite different parts of Australia that are titled ‘Bush Berries’. Taking this as our inspiration, we wanted to create a pink gin built around these berries.

Seeking to incorporate more native ingredients into this gin, we have also included the very distinctive river mint and Geraldton wax.

The citrus component of this gin comes from pink grapefruit, giving the gin a slightly sweeter flavour. It also includes angelica root, orris root, cardamon seeds, coriander seeds and edible lavender. The pink hue comes post distillation when we add rosella flowers (also known as ‘wild hibiscus’) and a small quantity of raspberries. The colour varies with different batches of gin according to the nature of the rosella flowers added. You might also notice that the pink colour does fade over time. This is because we do not use artificial colourings and these natural colours diminish slowly.

Lavender as a condiment works well with this drink, and pink grapefruit also complements the gin nicely.
