Bush Berry Gin

Bush berries (or lilly pilly berries) are important to many indigenous nations in Australia and commonly feature in their artwork – we have two paintings from quite different parts of Australia that are titled ‘Bush Berries’. Taking this as our inspiration, we wanted to create a pink gin built around these berries.
Seeking to incorporate more native ingredients into this gin, we have also included the very distinctive river mint and Geraldton wax.

The citrus component of this gin comes from pink grapefruit, giving the gin a slightly sweeter flavour. It also includes angelica root, orris root, cardamon seeds, coriander seeds and edible lavender. The pink hue comes after distillation when we add rosella flowers (also known as wild hibiscus) and a small quantity of raspberries. The colour varies with different batches of gin according to the nature of the rosella flowers. The pink colour slowly fades over time because we do not use artificial colourings – it’s purely natural.

Lavender works well as a condiment with this drink. Pink grapefruit also complements this gin nicely.
